Nut Snack Bars
100g ground almonds
50g nut butter (use whichever you prefer: cashew, hazelnut, peanut butter, etc)
80-100g coconut oil
150g mixed roasted nuts
10g chai and poppy seeds
70g dried apricots
50g dried cranberries
70g puffed rice
20g mixed seeds
Preheat the oven to 200C and roast the mixed nuts for 10-15 minutes until lightly golden.
Place the nut butter, ground almonds, coconut oil and honey into a saucepan and heat all together until melted. Once melted, add the other ingredients and mix well until covered.
Line a baking tray with silicone/non-stick greaseproof paper and pour in the mixture. Press it down firmly and place in the fridge to set.
When set, cut into bars and store in an airtight container, although we suspect they won't last long!
